Recipe - The Sigh
of Lima Suspiro de Limeña (Serves 6 people)
A
beautiful and unique Spanish dessert from Lima, Peru.
Guaranteed to bring a sigh with the first taste!
Ingredients: 1 can of sweetened,
condensed milk 1 can of evaporated milk 5 egg yolks 5 egg
whites ¼ cup of Port wine ¾ cup of sugar Cinnamon
powder 1 tablespoon of vanilla
Preparations: Make manjar blanco
(caramelized milk paste) over medium heat: pour the condensed milk
and evaporated milk into a pan, constantly stirring them until it
reaches a pudding like consistency, about 35-40 minutes. Then,
remove from the heat. Next, add the yokes and wisk to avoid
curdling. Then, add the vanilla. Pour into individual dessert
bowls, piecrust size or larger serving bowl and set aside.
Then make syrup with the sugar and the Port wine; keep syrup hot
while making a meringue. Beat the egg whites until they are
stiff. Then, pour a very thin stream of the hot syrup into the egg
whites. Beat until it is cool. Serve the manjar blanco with a
covering of meringue. Sprinkle with cinnamon
powder. Riquísimo!
